This would save me the step of copying and pasting things that come into my Outlook (or when people on the team send from Outlook and never go back to log their action). I have seen this in other CRM's and am surprised this isn't currently a feature. Unless I've missed it?

Thanks Chris for the mention! If anyone would be interested, we have a solution - SmartOUTLOOK NXT. It is similar to our RE SmartOUTLOOK product but for the NXT platform and provides users a quick way to record emails as actions. We're currently in the process to enable a bulk sync feature from Outlook folders to RE too.
It would have been great if such a feature was default within NXT, given how big it is. However, it gives companies like us the chance to provide everyone else with meaningful products. :)

Agree! This used to be possible within RE, but with NXT it is not, unless you host your own exchange server or purchase software from an external vendor (SmartThing). At least, that is what I've been told.
