Add ability to customize/rename action categories

Not all organizations track actions the same way.  Having the ability to rename the categories can help us better identify the types of engagement going on.

    Please consolidate all these ideas and determine the best way to give different choices in Action categories.

    This would *really* help us out. Even if we'd be limited to 5 categories in NXT, being able to name them so that they reflect the top 5 things we want to track per fundraiser would make those metrics much more useful to us.
