I think the events module needs more work, but a small fix would be to allow event managers to select multiple participants from the participant list and add participant options to all selected instead of having to go into each record. And when manually adding participants, you should be able to add participant options directly from the pop-up screen instead of adding them and then having to search through the list to go add options to the participant record.
