In our shop, we still rely heavily on database view for receipting and acknowledging gifts, because the queries are more robust, and we have more complex gifts than NXT is able to manage with lists.
This means that our gift processor, marks gifts as receipted or acknowledged to confirm the donor has received an official letter from our office.
The new AI function, then, would appear to be a tool for the gift processor to use when she sends out a receipt/acknowledgement. However, they are not receipts. They also aren't able to be official acknowledgements. They don't print, and they aren't able to sort with enough detail (NXT does not do this in general) for her to confirm constituent type or gift subtype.) This means that the AI acknowledgement probably isn't meant for the gift processor.
So - who would use it? Gift officers. However - they can't mark the gift as acknowledged, because that means the gift processor would miss the donation in her system. (If the DAF was marked Acknowledged by somebody outside of Advancement Services, they might not receive their official document.
Propose: Gift officers can use the acknowledgement email, which does create an action, but it does not mark the gift as acknowledged, or need the gift to be unacknowledged.

In “CUSTOMISE MESSAGE” box, how does selecting different acknowledgement letters from the dropdown menu impact the generated letter? I don’t observe any difference?

Also - to allow gift officers to use this tool, they have to have permissions to edit gifts. I just learned this today when a gift officer informed me of errors when trying to send out acknowledgements. We do not want gift officers editing gifts, only the advancement services team1
